Prosciutto, Red Pepper & Mascarpone Mushroom Pizza

Serves: 4

Ingredients
1 large prepared pizza base
180g tub Chris' Chunky Red Pepper, Mascarpone & Cashew Dip
1½ cups Mozzarella cheese, shredded
100g button mushrooms, sliced
½ medium red capsicum, cut into fine strips
4 cherry tomatoes
8 thin slices prosciutto
Chopped chives to serve

Directions
1. Preheat the oven to 220°C. Place the prepared pizza base onto an oven tray or pizza tray.

2. Spread the base of the pizza with about ¾ of a tub of Chris' Chunky Red Pepper, Mascarpone & Cashew Dip. Scatter the cheese, mushrooms, tomatoes and capsicum strips over the base. Twist each slice of prosciutto and arrange on the pizza. Bake for 25 minutes or until golden brown.

3. Cut into 8 slices and serve dolloped with the remaining Chris' Chunky Red Pepper, Mascarpone & Cashew Dip and scatter with the chives.

Cook's tips:
Pizza can be pre-made and refrigerated until ready for baking.
Vary toppings - such as shredded ham, fetta cheese and herbs, as desired.
