Ingredients
180gm Haloumi Cheese2 tblsp Olive Oil
2 punnets Cherry Tomatoes, halved
1 large Cucumber, halved and sliced
1 Yellow Capsicum, cut into bite sized pieces
1/4 Red Onion, sliced
1/2 cup Kalamatta Olives
Dressing
1/4 cup Chris's Traditional Hommus4 tblsp Olive Oil
1 tblsp Lemon Juice
In a small jar, combine the Hommus and olive oil.
Great twist on traditional greek salad.
Directions
Fry slices of Haloumi in the olive oil, drain and cut into bite sized pieces. Toss the tomato, cucumber, capsicum, red onion and olives together. Can be made the day before.
To serve, drizzle veggies with Hommus dressing.
