Serving Suggestion
Italian Style Vegetables:
Combine 350g kumara, 300g potatoes; 250g zucchini; 1 red capsicum and 1 red onion (all cut into chunks) in a baking dish. Add 1 tablespoon olive oil and stir to coat. Roast at 180ºC for about 45 minutes or until tender. Add ½ tub Chris' Chunky Red Pepper, Cashew and Parmesan Dip. Gently stir to combine. Delicious with grilled lamb, chicken or tuna.
