Roasted Vegetable & Creamy Chickpea Toss:
Roast zucchini, carrot and pumpkin until golden brown and tender. Place in a large bowl and gently mix through a can of drained chickpeas and one tub of Chris' Chunky Hommus & Cashew Dip.
